French Herb-Crusted Salmon with Ratatouille

Chicken Biryani is not just a dish, it’s an emotion for food lovers. From family lunches to special occasions, biryani always finds its place on the table. This recipe is my go-to home-style chicken biryani that turns out flavorful, aromatic, and perfectly balanced every single time.
I’ve been making biryani for years, and trust me, you don’t need fancy equipment or restaurant tricks. With the right method and patience, you can make restaurant-style chicken biryani right in your home kitchen.
Chicken – 1 kg (medium pieces)
Yogurt (curd) – 1 cup
Ginger-garlic paste – 2 tablespoons
Red chili powder – 1½ teaspoons
Lemon juice – 1 tablespoon
Salt – to taste
Fresh mint leaves – a handful (chopped)
Fresh coriander leaves – a handful (chopped)
Basmati rice – 3 cups (soaked 30 minutes)
Water – for boiling
Bay leaf – 1
Green cardamom – 3–4
Cloves – 4–5
Cinnamon stick – 1
Salt – to taste
In a large bowl, add chicken, yogurt, ginger-garlic paste, spices, lemon juice, salt, mint, and coriander. Mix well until the chicken is fully coated. Cover and marinate for at least 1 hour (overnight gives best flavor).
Tip: Longer marination means softer and more flavorful chicken.
Heat oil in a heavy-bottom pan. Add half of the fried onions and then add the marinated chicken. Cook on medium flame for 10–12 minutes until chicken is almost done and oil starts separating.
Boil plenty of water in a large pot. Add whole spices and salt. Add soaked rice and cook until it is 70% done (the rice should still have a bite). Drain immediately and keep aside.
Important: Do not overcook the rice, or your biryani will turn mushy.
Lower the flame. Spread cooked rice evenly over the chicken. Top with remaining fried onions, mint, coriander, ghee, and saffron milk.
Cover the pot tightly with a lid (or seal with dough) and cook on low flame for 20 minutes.
Turn off the flame and let the biryani rest for 10 minutes. Gently fluff from the sides before serving.
