French Herb-Crusted Salmon with Ratatouille
Chicken Karahi is one of those dishes that instantly reminds you of roadside dhabas and family dinners. It’s bold, spicy, and full of flavor, yet made with very simple ingredients. Whenever I want a proper desi non-veg meal without too much preparation, chicken karahi is what I cook.
This is a classic dhaba-style chicken karahi recipe, cooked in a kadai, with fresh tomatoes and basic spices. No cream, no complicated steps—just real, honest food.
Chicken – 1 kg (with bone, medium pieces)
Tomatoes – 5 medium (finely chopped or crushed)
Onion – 1 medium (optional, finely sliced)
Ginger-garlic paste – 2 tablespoons
Green chilies – 2–3 (slit)
Red chili powder – 1½ teaspoons (adjust to taste)
Kashmiri red chili powder – 1 teaspoon (for color)
Turmeric powder – ½ teaspoon
Coriander powder – 1½ teaspoons
Garam masala – 1 teaspoon
Salt – to taste
Oil – 4 tablespoons
Fresh ginger (julienned) – for garnish
Fresh coriander leaves – for garnish
Heat oil in a wide kadai or deep pan on medium flame. If using onions, add them first and cook until light golden.
Add ginger-garlic paste and sauté for a few seconds until fragrant. Add chicken pieces and cook on high flame for 5–6 minutes until the chicken changes color and releases its juices.
Add salt, turmeric, red chili powder, Kashmiri chili powder, and coriander powder. Mix well so the chicken is evenly coated with spices.
Add chopped or crushed tomatoes and green chilies. Cook on medium flame, stirring occasionally, until tomatoes break down completely and oil starts separating from the masala.
This step takes time but is very important for authentic karahi flavor.
Add garam masala and mix well. Cook for another 5–7 minutes until the chicken is fully cooked and the gravy thickens.
Turn off the flame. Garnish with fresh ginger juliennes and chopped coriander. Serve hot.
Always cook karahi on high to medium flame for best taste
Use fresh tomatoes, not canned puree
Don’t add water unless absolutely necessary
A wide pan helps the masala cook evenly
Best served with tandoori roti or naan
Onion rings and lemon wedges on the side
Pair with plain yogurt or raita
