French Herb-Crusted Salmon with Ratatouille

Chicken wings – 10–12 pieces (lollipop cut)
Ginger-garlic paste – 1 tbsp
Soy sauce – 1 tbsp
Red chili sauce – 1 tbsp
Black pepper – 1 tsp
Salt – to taste
Cornflour – 3 tbsp
All-purpose flour (maida) – 2 tbsp
Egg – 1
Oil – for deep frying
Oil – 1 tbsp
Garlic (finely chopped) – 1 tbsp
Red chili sauce – 1 tbsp
Tomato ketchup – 1 tbsp
Soy sauce – 1 tsp
Vinegar – 1 tsp
Spring onions – for garnish
In a bowl, add chicken lollipops, ginger-garlic paste, soy sauce, red chili sauce, pepper, salt, cornflour, maida, and egg. Mix well until each piece is nicely coated. Rest for 30 minutes for best flavor.
Heat oil on medium flame. Deep fry the marinated chicken until golden brown and crispy. Remove and place on tissue paper.
Heat 1 tbsp oil in a pan. Add chopped garlic and sauté until aromatic. Add red chili sauce, ketchup, soy sauce, and vinegar. Toss fried chicken lollipops in this sauce for a glossy, restaurant-style finish.
Serve hot with schezwan sauce or mint chutney
