French Herb-Crusted Salmon with Ratatouille

Noodles (hakka or egg noodles) – 200 g
Boneless chicken – 250 g (thin strips)
Garlic – 2 tablespoons (finely chopped)
Onion – 1 medium (sliced)
Cabbage – ½ cup (shredded)
Carrot – ½ cup (julienned)
Capsicum – ½ cup (sliced)
Spring onions – 2 tablespoons (chopped)
Soy sauce – 1½ tablespoons
Chili sauce – 1 tablespoon
Vinegar – 1 teaspoon
Black pepper – 1 teaspoon (freshly crushed)
Salt – to taste
Oil – 2 tablespoons
Boil noodles in salted water until just cooked (al dente). Drain, rinse with cold water, and toss with a few drops of oil to prevent sticking. Keep aside.
Heat oil in a wok or wide pan on high flame. Add chicken strips, season lightly with salt and pepper, and stir-fry until fully cooked and slightly golden. Remove and keep aside.
In the same pan, add a little more oil if needed. Add chopped garlic and sautรฉ on medium flame until fragrant (do not burn).
Add sliced onions and stir-fry on high heat until slightly soft but still crunchy.
Add cabbage, carrot, and capsicum. Stir-fry on high flame for 2–3 minutes. Vegetables should remain crunchy.
Add cooked chicken and boiled noodles to the pan. Add soy sauce, chili sauce, vinegar, black pepper, and salt.
Toss everything well on high flame for 2–3 minutes until noodles are well coated and slightly smoky.
Add spring onions, mix once, and turn off the heat.
