French Herb-Crusted Salmon with Ratatouille

Boneless chicken – 300 g (cut into small cubes)
Butter – 2 tablespoons
Olive oil – 1 tablespoon
Garlic – 1 tablespoon (finely chopped)
All-purpose flour – 2 tablespoons
Milk – 2 cups (warm)
Fresh cream – ½ cup
Cheese (mozzarella or parmesan) – ½ cup (grated)
Salt – to taste
Black pepper – 1 teaspoon (crushed)
Mixed herbs or Italian seasoning – 1 teaspoon
Chili flakes – ½ teaspoon (optional)
Mushrooms (sliced)

Boil pasta in salted water according to package instructions until al dente. Drain and keep aside. Do not overcook.
Heat olive oil in a pan. Add chicken pieces, season with salt and black pepper, and cook on medium flame until fully cooked and lightly golden. Remove and keep aside.
In the same pan, add butter. Once melted, add chopped garlic and sauté until fragrant. Add flour and cook for 1–2 minutes on low flame, stirring continuously.
Slowly add warm milk while stirring to avoid lumps. Cook until the sauce thickens.
Add fresh cream, cheese, mixed herbs, and chili flakes. Mix well until the sauce becomes smooth and creamy.
Add cooked chicken and pasta to the sauce. Toss gently so everything is well coated. Cook for 2–3 minutes on low flame.
