French Herb-Crusted Salmon with Ratatouille

This recipe gives you exactly that street-style, restaurant-style taste with separate rice grains, juicy chicken pieces, and perfectly balanced seasoning. Once you try this at home, takeout won’t feel the same again.

Cooked basmati rice – 3 cups (preferably day-old rice)
Boneless chicken – 250 g (small cubes)
Eggs – 2 (optional but recommended)
Carrot – 1 small (finely chopped)
Beans – 6–8 (finely chopped)
Capsicum – ½ cup (chopped)
Spring onions – ¼ cup (chopped)
Garlic – 1 tablespoon (finely chopped)
Oil – 3 tablespoons
Salt – to taste
Black pepper – 1 teaspoon
Soy sauce – 1½ tablespoons
Vinegar – 1 teaspoon
Chili sauce – 1 teaspoon (optional)
Green chili sauce – 1 teaspoon (optional)
Heat oil in a wok or large pan on high flame. Add chopped garlic and sautรฉ for a few seconds until fragrant.
Add chicken pieces, sprinkle salt and pepper, and stir-fry on high heat until fully cooked and slightly golden. Remove and keep aside.
In the same pan, add a little oil if needed. Pour beaten eggs and scramble quickly. Keep them soft and fluffy.
Add carrots, beans, and capsicum. Stir-fry on high heat for 2–3 minutes. Vegetables should stay slightly crunchy — that’s the secret to restaurant texture.
Add cooked chicken back to the pan. Now add rice and gently mix on high flame.
Pour soy sauce, vinegar, and chili sauces. Toss everything quickly so the rice stays separate and does not break.
Add spring onions at the end and give one final toss.
Serve hot with Chicken Manchurian
